Dan Hong

Dan Hong’s career began in his family’s Sydney-based Vietnamese restaurant chain, Thanh Binh.

Honing his craft at Longrain, Pello and Marque, three of Sydney’s most celebrated establishments, Dan subsequently took the position of Chef de Partie at the legendary Tetsuya’s in 2005. Dan was later appointed Sous Chef of the opening team of Bentley Restaurant and Bar in 2006, two years later won the prestigious Josephine Pignolet Best Young Chef Award at the SMH Good Food Guide Awards.

After a time spent in New York, Dan returned to Sydney and took on the position of Head Chef at Merivale’s Lotus restaurant, infusing the menu with his beautifully fresh Asian flavour combinations. In 2010, he was given a chance to fully draw upon his heritage as Joint Head Chef of Potts Point hotspot Ms Gs, before his third Merivale venture, Mexican cantina El Loco, saw him explore new ground.

In August 2012, Dan took on his greatest challenge to date. Opening a huge 240 seat Cantonese style restaurant, Mr Wong in Sydney’s CBD.

Now as Executive Chef of three Merivale restaurants – Ms.G’s, El Loco and Mr Wong – Dan has cemented himself as one of Sydney’s most creative and fastest rising chefs. Renowned for incorporating myriad flavours to his cooking, bold and brilliant, Dan continues to prove himself one of this country’s most exciting culinary talents.
