Dan Hong has worked in some of the most prestigious restaurants in Australia. He began his career in the kitchen of his family’s Vietnamese restaurant chain, Thanh Binh, in Sydney. Then went on to develop his culinary skills at an elite list of Sydney restaurants including Longrain and Marque, where he completed his apprenticeship. After qualifying, Dan joined the Tetsuya’s team as Chef de Partie followed by his appointment at Bentley Restaurant and Bar as Sous Chef. Each restaurant held one, two or three Sydney Morning Herald Good Food Chef Hats and in 2008 Dan was also awarded the Josephine Pignolet Best Young Chef Award at the Sydney Morning Herald Good Food Guide Awards.

Dan has since opened some of Sydney’s most exciting dining destinations under hospitality group Merivale and is now Executive Chef of multiple Merivale restaurants across Sydney, including the modern Asian diner Ms. G’s, Sushi-E at establishment, Queen Chow Enmore and Manly, Cantonese powerhouse Mr Wong and the most recently opened MuMu at Ivy which is inspired by South East Asian street food.

In 2022, SBS Food screened The Streets with Dan Hong in which Dan explores street food from around the world. Dan recently completed filming for the second series, and it is set to air later this year.

Dan was previously a judge on SBS’s The Chefs Line, and also hosted the ABC iView series Shelfie. The series followed Dan as he ventured inside the kitchens of everyday Australian’s. Throughout the series Dan’s mission was to cook a delicious, conventional meal using only the contents on the homeowner’s shelves together with 2 key ingredients Dan brought with him.

In late 2014, Dan released his first book Mr Hong through Murdoch Books, which is an exploration of his colourful path through life as it is a beautifully illustrated book of 100 recipes.
